A friend has blessed us with several zucchini this summer (and last), and this zucchini bread has become one of my new favorites. It tastes wonderful, and, it doesn't dirty up very many dishes as it can all be mixed in one bowl. I love to have a warmed-up slice of this with a glass of iced coffee.... mmmm... perfection!
Cinnamon Zucchini Bread
2 1/2 cups sugar
3 eggs
3 cups flour
3 tablespoons vanilla
3 cups flour

1 cup oil (I use canola.)
2 cups zucchini, grated

1/4 teaspoon salt
1 teaspoon baking soda
1/4 teaspoon baking powder
1 tablespoon cinnamon
Preheat oven to 350 degrees. Using one big bowl, combine ingredients in the order listed. Divide batter into two greased loaf pans. Bake for one hour.

ReplyDeleteI'm always glad to get a new recipe using zuchinni. This looks like a delicious one...we have so many zuchinni every year....so I think I'll make a few loaves of this and put them in the freezer to bring out as the weather gets cooler! Thanks!
